From Ryan: "De Wetshof in South Africa has the great fortune of being in the right climate at the right latitude with the right soils for making beautiful Chardonnay and they know it. The greatest Chardonnay vineyards in Burgundy, where the grape originated from wild vines, are those in limestone soils. The limestone gives the grapes a beautiful acidity even in places where maintaining acidity in the grapes is difficult. Lemon, lime, white peach, even a touch of saffron; all beautiful elements of the effects of limestone, and show beautifully in this wine."

From Ryan: "While many people believe white wine isn't meant for aging, they often aren't aware that the wines they're describing weren't intended to be aged. Grapes like Pinot Grigio or Sauvignon Blanc are meant to be enjoyed young, but other white grapes like Chardonnay, and Riesling, have tremendous aging potential. The Urziger Wurzgarten vineyard is among the best and most well-known in the Mosel Valley, particularly due the brown/red slate soils that impart a hint of spice to the wine. Slightly sweet but with great fruit flavors and acidity, this is the perfect bottle for the end of the meal and goes well with everything from a fruit and cheese board to apple pie to vanilla gelato."
